Ingredients
1 pound of large or jumbo green shrimp
1 cup of whole wheat couscous
1 cup chicken broth
3 Tbls grape seed oil
2 Tbls olive oil
1 red pepper cut into thin strips
4 diced garlic cloves
1 lemon, juiced and zest
1/2 cup chopped fresh basil
kosher salt & fresh ground pepper
Preparation
In sauce pan, place broth and grape seed oil and bring to boil. Add couscous stirring constantly. Cover and simmer for 5 minutes
In skillet, with olive oil, put shrimp, red peppers and garlic and cook until shrimp turn pink. Stir frequently.
Remove from heat and add lemon juice, zest, basil, couscous, salt & pepper.
