Ingredients

6 c oats

1 c chopped nuts (walnuts and/or almonds work well)

1 c coconut

3 T oil

3 T honey

dash salt

Optional: 1/2 t cinnamon

Preparation

Preheat oven to 350F Stir together oats, nuts, coconut in a large mixing bowl. Add salt and cinnamon, if used Pour oil and honey into a small bowl, heat in microwave oven 20-25 seconds to thin honey. Stir to blend. Pour honey and oil mixture over oat mix; stir to blend (chopsticks work well for this) Spread mix evenly on a baking sheet (with side walls) Bake 10-12 minutes then stir, especially at edges, to avoid over-cooking. Bake another 8-10 mins (20 minutes total.

Cool on rack and then store in an air-tight container for up to 1 week.
