Ingredients

1 15 ounce can chickpeas (2 cups cooked), drained and rinsed

2 cloves garlic, chopped

zest of 1 lemon

2-3 T. fresh lemon juice

4 T. vegetable stock or water

1 t. low-sodium tamari or Bragg Liquid Aminos

Preparation

  1. Combine chickpeas, garlic, lemon zest, lemon juice, and stock in a food processor and process until smooth. Add more stock if too thick.
  2. Taste and add as little tamari as possible. (With 3 T. of lemon juice, you probably won’t need extra seasoning.) Variation: Add 1 cup loosely packed cilantro or parsley; use cannellini beans instead of chickpeas.
