Ingredients

8 baby pattypan squash

1 lb beef tenderloin, cut into 12 chunks

8 (2 in) pieces red beel pepper

8 shiitake mushroom caps

1/3 cup balsamic dressing

1/2 tsp salt

1/4 tsp pepper

Preparation

Boil squash 3 minutes. In bowl, mix all ingredients. Marinate 20 minutes. Thread onto 4 skewers. Grill or broil 8 minutes, turning, for medium-rare.
