Ingredients

One green and one red bell pepper chopped.

One small bunch of green onions cut on the diagonal.

2 to 3 carrots cut on the diagonal

2 cups Mandarin orange segments

8 ounces orange juice

1/3 cup brown sugar

2 teaspoons ground ginger

1 teaspoon garlic powder

1 to 2 teaspoons cornstarch

1 1/2 pounds boneless skinless

1 teaspoon balsamic vinegar

chicken breasts or thighs

1/3 cup flour

Preparation

Coat the chicken pieces with flour and then brown in a skillet with olive oil. The chicken does not have to be cooked completely.

Place the chicken pieces in the bottom of the crock-pot.

Mix the remaining ingredients together and then pour over the chicken pieces. Gently stir ingredients together. Cook for 5 to 6 hours on low.
