Rub

1/4 cup black pepper

1/4 cup paprika

1/4 cup turbinado sugar

2 tbsp salt

2 tsp dry mustard

1 tsp cayenne

Mop

2 cups vinegar

1 cup water

3 tbsp black pepper

2 tsp salt

1 tbsp worcestershire sauce

1 tbsp paprika

1 tbsp cayenne

Preparation

night before place rub on pork, smoke at 200-250 degrees for 1- 11/2 hours per pound to 175 degrees internal. Mop as needed 1/hr
