Ingredients

8 pita bread rounds

1 ½ pounds sliced smoked turkey

2 watercress bunches, trimmed

8 plum tomatoes, sliced

1 cup walnuts, chopped

Curried Apricot Mayonnaise

Preparation

Preheat oven to 350˚F. Place pita bread on baking sheet and heat in oven until just warm, about 5 minutes. Cut rounds in half, forming pockets. Place in napkin lined basket and keep warm. Arrange turkey, watercress and tomatoes on platter. Place walnuts and mayonnaise in bowls. Allow diners to assemble their own sandwiches.

For Curried Apricot Mayonnaise:

1 ½ cups mayonnaise ¼ cup apricot jam ½ tablespoon curry powder

Whisk ingredients in medium bowl to blend well.
