Ingredients
3 C. lightly packed shaved, bonito flakes
3/4 C. soy sauce
1/4 C. Mirin
2 T. sugar
1 sheet nori
1 lb. soba noodles
1/2 C. chopped scallions
Optional additions: chopped spinach, cubed tofu, sliced mushrooms, bean sprouts, etc
Preparation
- Bring 10 C. water to boil. Stir in bonito flakes, turn off heat and steep for 10 min, No More. Strain liquid to remove flakes.
- Combine soy sauce, mirin, sugar and pinch of salt in broth pot. Bring to boil for a minute. Add bonito broth and boil.
- Heat lg. pot of water to boiling. Cook soba noodles in boiling water for 3-4 minutes (tender). Drain, rinse with cold water, then drain again.
- Portion noodles into bowls. Add scallions and other optional additions. Garnish with toasted nori. Ladle stock of noodles and serve.
