Ingredients

1 T. olive oil, divided

1/2 lb. ground pork

1/2 lb. ground beef

2 Large carrots, peeled and diced

1-1/2 teas salt, divided

2 cups jarred tomato sauce (I used 24 oz. spaghetti sauce

4 c. water

1 cup medium or fine polenta. . I used coarse

1/4 c. parmesan cheese, plus more for serving

Preparation

In a large frying pan with a lid, heat 1/2 T. of the oil. Add meat and cook, breaking the meat up. . until browned. Strain meat. Add 1/2 T. oil to same pan add carrots and cook until tender. Add strained meat and tomato sauce. Simmer covered for about 10 min. Cook polenta according to pkg. directions. . then add parmesan. Top polenta with meat sauce and more parmesan.
