Ingredients

4 oz fresh white bread

3 C chicken or Vegetable Stock

1 C almonds, blanched

2-3 garlic cloves, sliced

5 T good Olive Oil

1 1/2 T Sherry Vinegar

salt, pepper & cayenne

Seedless red and green grapes, halved, and sliced almonds toasted for garnish

Preparation

Break the bread into a large bowl and moisten with 2/3 cup of stock. Let stand for 5 minutes.

In a food processor, finely grind the almonds, then blend in the bread. With the motor running, gradually blend in the olive oil until smooth. Add the sherry vinegar and the remaining stock. You may have to do this in batches. Season with salt, pepper and cayenne. Chill about 3 hours. Scatter grapes and almonds on top.
