Ingredients
1/2 cup Port
1/2 cup orange juice
1 cinnamon stick, broken
4 whole cloves
2 star anise
3 cups fresh or frozen cranberries (750 ml)
1 cup brown sugar
1 tbs grated orange peel
Preparation
In a large saucepan, combine Port, orange juice, cinnamon, cloves and star anise. Bring to a boil. Reduce heat and simmer gently, covered, for 5 to 10 minutes to infuse flavours of spices. Remove spices from pan.
Add cranberries, sugar and orange peel and simmer for 5 to 10 minutes, or until cranberries pop sand sauce thickens. (It will thicken more when cold.)
Pour sauce into a bowl and chill. Serve cold.
