Ingredients
12 oz (376 g) feta cheese
½ cup (125 mL) olive oil
3 tbsp (45 mL) red wine vinegar
1 tsp (5 mL) Hungarian paprika
2 tsp (10 mL) cracked peppercorns
3 dried red chillies
2 tsp (10 mL) dried oregano
2 tsp (10 mL) dried tarragon
Flat or pita bread
6 green onions, cleaned
Fresh oregano, tarragon, dill or parsley

Preparation
Dice feta into ½-inch (1-cm) cubes. Place in bowl. Whisk together oil, vinegar, paprika, peppercorns, chillies, oregano and tarragon. Toss with cheese. Cover and refrigerate. Leave to marinate for two days, turning cheese occasionally.
Serve with flatbreads, green onions and fresh herbs. Guests can roll the cheese up on the flatbread together with a little onion and fresh herbs
