Ingredients

1 cinnamon stick

10 whole cloves

4 whole star anise

2 whole cardamom pods

1/2 vanilla pod

1 cup honey

Preparation

Warm all ingredients gently over low head and pour into a clean jar. Cover and let sit for a week, tilting gently every day to move spiced around. After a week, taste it. If you’d like a strong flavor, let sit another week. If it is how you like it, place the jar in a gently simmering pan of water to warm it and strain the honey trhough a single layer of cheesecloth.
