Ingredients
2 C pumpkin pureé
4 eggs
1/2 C oil
1/2 C apple sauce
2/3 C water
1 1/2 C sugar
1 1/2 C brown sugar
2 C all purpose flour
1 1/2 C whole wheat flower
2 tsp baking soda
1 1/2 tsp table salt
1 tsp cinnamon
1 tsp nutmeg
1/2 tsp cloves
1/4 tsp ginger
Preparation
Preheat oven to 350 degrees. Grease and flower 7x3in loaf pans. In a large bowl mix together pumpkin, eggs, oil, apple sauce, water, sugar, and brown sugar. In a separate bowl whisk together flour, whole wheat flower, baking soda, salt, cinnamon, nutmeg, cloves, and ginger. Stir dry ingredients into wet ingredients until just blended. Pour into pans and bake one hour.
