Ingredients

1 (10-ounce) package frozen corn

1 (15 1/2-ounce) can black beans, drained

6 green onions, sliced

2 large, ripe tomatoes, chopped

1 Tablespoon chopped garlic

4 Tablespoons lime juice

1 1/2 teaspoons ground cumin

1 (14-ounce) can green chiles, chopped

1 Tablespoon fresh cilantro

Preparation

  1. Let corn thaw in refrigerator overnight. Drain.

  2. Mix black beans and all remaining ingredients in medium-size bowl. Put bean mixture in fridge for a few hours or overnight to chill.
