Ingredients

1/2 medium onion, chopped

4 cloves garlic, pressed

1/2 sweet potato, about 5 oz, peeled and grated, yielding about 1 cup

1 15 oz can black beans, drained and rinsed

olive oil

1/2 teaspoon hot sauce

1 teaspoon ground cumin

1 large egg

1/4 cup dried breadcrumbs or panko

salt and chipotle pepper to taste

Preparation

  1. Preheat broiler. Adjust top rack to 4-6 inches from element. Line a cookie sheet with foil sprayed with a little cooking spray.
  2. Place the drained black beans in a medium bowl.
  3. In a large skillet, fry the onion in a little oil for one minute. Add the garlic, hot sauce and cumin. Stir 30 seconds. Remove from heat and add to black beans.
  4. Mash up most of beans and mix in onion.
  5. Beat egg and add to beans, along with grated sweet potato and breadcrumbs.
  6. Form into 4 good sized patties, placing on prepared cookie sheet.
  7. Broil 8 to 10 minutes until crisped and golden brown, flip carefully and broil another 2-3 minutes.
