Ingredients

2 green chills (like chile relleno)

1 pound potatoes cut into 1/2-inch cubes and covered with water (also can be sold frozen)

2 T. canola or NONE

1 t Panch phoron (in one of our glasses in closet)

1 dry chile or cayenne chiles (fresh)

1 t salt

1/2 t turmeric

1 cup coconut milk (in powder)

8 oz fresh spinach, Angora or other types of greens

Preparation

  1. burn Panch phoron and then chiles

  2. add potatoes and brown

  3. add turmeric, salt and coconut (1 cup water with powdered coconut) and simmer (15 min)

  4. Add greens at the end
