Ingredients
1tbsp vegetable oil
1/2c chopped onion
1/2c chopped carrot
1/2c diced snow peas
1/2c stemmed and chopped mushrooms
2 1/2c cooked sushi rice (1 c raw)
2 tbsp soya sauce
1tbsp mirin
1tbsp sesame oil
2tsp sambal oelek
1/2 tsp sugar
Salt and pepper
2c baby spinach
Preparation
Heat oil in a large pan Sauté carrots and onions about 2 mins Add snow peas and mushrooms. Sauté another 2 mins Add cooked rice. Pour in liquid ingredients Toss rice until marinade is absorbed Season generously with salt and pepper Fold in spinach. Let spinach wilt.
