Ingredients

1 cup Mayo

2 t. white balsamic vinegar

1/8 t. cayenne pepper

1/3 Maytag blue cheese (or any good blue-veined cheese)

1 loaf French baguette, trimmed and sliced

1 /2 lb. beef tenderloin per person :roasted rare to medium rarse, sliced 3/8 inch thick

2 T cracked black peppercorns

1 cup fresh arugula (Jeff uses romaine)

1 red onion, sliced into rings

1 beefsteak tomato, sliced 1/4 inch thick (if tomatoes are good…Jeff

uses campari tomatoes…always good)

2 t. mixed peppercorns, cracked

Preparation

Mix mayo with other ingredients. Don’t use blender.
