Ingredients
3 T. olive oil
1 whole garlic clove
1/2 cup diced onions
1 carrot diced
4 thinly sliced round or sirloin steaks, no more than 3 oz. ea.
3 or 4 roma tomatoes diced, or 15 oz. can
2 tsp. fresh oregano
1 sprig rosemary
Preparation
- Gently saute the garlic clove in oil over moderate heat until just barely golden, approximately 3 mins. Remove the garlic.
- Add the onions and carrot and continue cooking until the vegetables have softened, about 5 more minutes.
- Remove the vegetables and raise temperature to high. Add the steaks and brown the steaks on both sides, about 30 seconds to 1 min. per side.
- Reduce heat to simmer, add the tomatoes, oregano and rosemary and the cooked vegetables. Simmer for about 15 minutes. Serve immediately.
