Ingredients

1 or 2 cut up rabbits

flour

salt and pepper

shortening

2 diced medium onions

water

Preparation

Roll rabbit in mixture of flour, salt, and pepper. Fry in hot shortening until well browned. Place fried rabbit in 6-8 quart Dutch oven. Pour out most of shortening from frying pan and scrape the browned flour from bottom of frying pan over fried rabbit. Add diced onion, cover with water and place lid on in dutch oven and simmer over low heat until rabbit is tender. Young rabbits take ~1 hr. Old rabbits and swamp rabbits take 2-3 hrs.
