Ingredients

4 c. fresh strawberries, sliced

1 pkg. Jell-O strawberry flavor gelatin, divided

2 c. flour

4 t. baking powder

1/4 t. salt

2 eggs

2 c. milk

1/4 c. oil

1/2 c. maple-flavored or pancake syrup

1 c. thawed Cool Whip Whipped Topping

Preparation

  1. Toss strawberries with 1 T. dry gelatin mix. Combine remaining dry gelatin mix, flour, baking powder and salt.
  2. Beat eggs, milk and oil in large bowl with whisk until blended. Stir in flour mixture.
  3. Ladle batter onto hot griddle or into hot skillet sprayed with cooking spray, using 1/4 c. batter for each pancake; cook until bubbles form on tops, then turn to brown other sides.
  4. Serve topped with strawberry mixture, syrup and Cool Whip.
