Ingredients

Salad:

12 Cups Spinach

1 pint (2 cups) strawberries, sliced

2/3 cup sliced green onions

2 cans (11 oz. each) mandarin oranges, drained

1/4 cup pine nuts (optional: toast them!)

Dressing:

1/4 cup orange juice

1/4 cup honey

2 TBS vegetable oil

2 Tsp Dijon mustard

Preparation

  1. Prepare dressing by mixing all ingredients and shaking them together.

  2. Prepare salad by mixing all salad ingredients together, except pine nuts, which are sprinkled on top.

  3. Serve.
