Ingredients

2 acorn squash cut in half

1/4 cup olive oil

salt

pepper

1 cup quinoa, rinsed and drained

1/2 cup green onion and chives diced

1/2 cup crumbled feta cheese

2 tsp red wine vinegar

red pepper flakes

Preparation

Preheat oven to 425. Brush sides of squash with 2 tbsp olive oil. Season w/ salt and black pepper. Roast cut side down until tender and carmelized (15-20 min). Make quinoa. (about 15 min) Combine quinoa, onion and chives, feta cheese, 2 tbsp olive oil and vinegar. Season with salt and red pepper flakes. Divide filling among squash.
