Ingredients
5 large mushrooms
oil for pan
2 strips finely chopped bacon
1 tbsp oil
1 tbsp minced garlic
chopped chives
120g cream cheese
110g goats cheese
1/3 each red, green, yellow
capsicums - chopped
6 cherry tomatoes - chopped
shredded parmesan
salt, pepper
Preparation
Preheat oven to 170 ° C
Chop mushroom stems and fry with oil, garlic and bacon
Mix the chives, cream cheese, goats cheese, some parmesan, salt and pepper together and add mushroom stems, garlic and bacon.
Spoon a heap of the mixture onto each mushroom Top with breadcrumbs, parmesan and a little knob of butter. Brush sides of each mushroom with a bit of melted butter so they are not dry
