Ingredients

1 cup uncooked quinoa

1/4 cup macadamia nuts

1 small green onion, thinly sliced

3//4 cup diced seeded cucumber

1 cup diced green apple

1/4 cup diced green pepper

1/2 red serrano pepper, thinly sliced

Juice of 1 lemon

1 tsp agave necter

3/4 tsp salt

Preparation

Cook quinoa per package directions and cool. In a small dry skillet, toast macadamias 3 -4 minutes, cool and crush with knife.

In large bowl, combine all ingredients. Toss and check seasonings adding additional salt or lemon juice if needed.
