Ingredients

6 cups fresh corn cut from cob (about 12 ears)

1 1/2 cups water

1/2 cup chopped green onions

1/4 cup chopped green pepper

2 Tablespoons chopped fresh basil

2 Tablespoons white wine vinegar

1/2 teaspoon sugar

1/4 teaspoon salt

1/4 teaspoon ground white pepper

1/4 teaspoon hot sauce

Preparation

  1. Combine first 4 ingredients in a medium saucepan. Bring to a boil; reduce heat, and simmer, uncovered, 20 minutes.

  2. Add chopped basil and next 5 ingredients; cook 10 minutes or until corn is tender. Transfer to a serving bowl; serve with a slotted spoon. Garnish with basil sprigs, if desired.
