Ingredients
1 lb chicken, cooked and cubed
2 cups cooked quinoa
4 cups spinach
1 bunch shallots, chopped
3 red peppers
1 large cucumber, chopped
2 cups cherry tomatoes, halved
1 cup chopped parsley
1 cup chopped mint leaves
1 teaspoon ground cumin
Freshly squeezed lemon juice (and a few sliced lemons)
Olive oil
Salt and Pepper
Preparation
Bake the chicken as you usually would (40 mins, 350 degrees)
Bake the quinoa as you usually would (rinse and boil, then simmer for 40 mins)
Combine all ingredients in a large bowl. Allow to chill in the refrigerator before serving.
