Ingredients

1/2 c pine nuts toasted

1/2 pkg. bow tie pasta cooked, rinsed

1 lb. flank steak cut into 1/2" strips

1/2 large onion diced

1 clove garlic

4 silver dollar size mushrooms sliced

1/2 jar of sun dried tomatoes in oil

1/4 c olives sliced

zest of 1 lemon

Preparation

In largest cast iron skillet toast the pine nuts. Meanwhile start the pasta. Remove toasted pine nuts to plate. Heat pan to high, add 2 T oil from tomatoes and stir fry steak for 2-3 minutes. Remove to plate. Reduce heat to med high. Add a little oil if needed . Add onion, garlic and mushrooms. Cook 5 minutes til soft. Add tomatoes and olives. Cook one minute. Add lemon zest, pasta, steak and pine nuts. Toss til warmed through. Serve with feta cheese. Absolutely yummy!
