Ingredients
2 lb wild salmon, skinned, uniformly thick fillets (1/2 lb per person)
1 lb fresh spinach (1 large pkg or 2 med pkgs, or 1/2 clamshell per person)
shallots 1 large or 2 med
dry white wine (very little)
salt, pepper
Preparation
Butter bottom of foil where spinach will be piled, 2 pats each place spinach, then chopped shallots on foil sprinkle very little wine place salmon salt, pepper wrap well in foil packet (4 fillets on top of 1 lb spinach) Place on cookie sheet for stability bake 400 degrees for 50 - 60 min.
Be VERY careful when you open! Steam will pour out. You may have to slightly drain liquid before serving.
