Ingredients
1/2 C. all-purpose flour
2 Eggs, slightly beaten
1/2 tsp salt
1 lb chicken in cubes
Cooking oil for frying
1/2 C. broth or water
1 C. pineapple chunks
6 pieces sweet pickles, sliced
1 green pepper diced, julianned or chunks
1 carrot cut in rounds
1 garlic clove chopped fine
Preparation
Make a batter with flour,eggs and salt. Dip meat into batter and fry until golden brown. Remove and drain on paper. Put meat back into pan and add remaining ingredients. Cover and cook for 10 minutes.
