Ingredients

2 large eggs, beaten

1 Tbsp dark brown sugar

1 tsp apple pie spice

1 tsp kosher salt

½ tsp black pepper

4 ½ cups shredded sweet potatoes (approx. 2 lg potatoes)

½ cup matzah meal

vegetable oil for frying

Preparation

In food processor, puree eggs, brown sugar, apple pie spice, salt and pepper until smooth. Add 2 cups shredded sweet potatoes and matzah meal and pulse-puree for 15-20 seconds. Transfer mixture to med-sized bowl and stir in remaining sweet potatoes. Heat veg oil, 1 inch deep. Form ¼-cup potato mixture into pancakes and fry until golden (approx. 6-8 min per side).
