3 1/2 Cups Sweet potato diced (Blend 2-2 1/2 at end)

1 T Butter

1 T Flour

1 tsp salt

1 1/2 C chicken Broth

1/4 tsp ginger

1/8 tsp cinnamon

1/8 tsp nutmeg

1 T brown sugar

1 1/2 C unsweetened 45 cal coconut milk

Preparation

Cook sweet potato and blend two thirds. Add other ingredients and bring to simmer for 20 minutes. Yum
