Ingredients

SWEET POTATOES

4 lbs peeled sweet potatoes, cut into ½ inch wedges

¼ c butter or olive oil

½ c honey

1/3 c fresh lime juice

1 teaspoon chipotle powder

Kosher salt

Preparation

Melt butter and whisk in the other ingridients. Simmer for 3 - 4 minutes. Pour over potatoes in a shallow dish, cover with foil and bake at 375 degrees for about 30 minutes. Take the foil off, baste and bake another 10 or so minutes (you can turn the heat up to 400 if you want them a little browned).
