Ingredients
2-quarts graded cucumbers
2-cups shredded red sweet peppers
2-cups shredded green peppers
1-cup shredded onion
1-tablespoon turmeric
Brine:
1 1/2 cups brown sugar
1-quart cider vinegar
1/2- cup salt
Place in bag:
2-teaspoons whole pickling spice
2-teaspoons whole cloves
2-whole cinnamon sticks ( broken)
Place in cucumber mixture:
3 tablespoons mustard seed
Preparation
Place cucumbers, peppers, onions,in a bowl or crock. Sprinkle with turmeric. Dissolve 1/2 cup salt in 2-quarts of cold water. Let stand 1 hour. Drain well, cover with more cold water and let stand 1 hour. Drain well.
Brine: place seasonings in bag and bring to simmer in the cider vinegar. Let rest for 3-4 hours. Remove bag and place over cucumber mixture. Mix in the 3 tablespoons of mustard seeds. Let all ingredient stand for 12-18 hours. Bring to boil, pack in pint jars and proses 10 minutes in a hot water bath.
