Ingredients

1 1/2 cups flour

1 cup sugar

1 1/2 teaspoons baking powder

1/2 cup margarine

1/2 cup yogurt

1 large egg

2 large egg yolks

1 teaspoon vanilla

1/2 teaspoon salt

1/4 cup strawberries (fresh- mashed or pureed)

Preparation

preheat the oven to 350 grab a handful of strawberries and mash with a potato masher (or puree) mix: flour, salt, baking powder in a bowl and then set aside mix: margarine and butter, then add in remaining ingredients, mix until combined combine the two mixtures and scoop the batter in to pan bake for 20-24 minutes

For the Frosting:

Ingredients:

  • 1 cup butter, room temperature
  • 2 1/2 cups icing sugar
  • 1 teaspoon vanilla
  • 3 tablespoons mashed strawberries

Method:

  • mash a few strawberries (like you did earlier for the cupcake batter)
  • mix butter and sugar together
  • blend in the vanilla and strawberries
  • wait for the cupcakes to cool (about 20-30 minutes after they exit the oven)
