Ingredients
1 lb swiss chard
4 oz baby bella mushrooms
1 medium carrot
1 clove garlic
1/8 red onion
1/4 lime
Pepitas (pumpkin seeds)
1 teaspoon olive oil
1 teaspoon honey
salt & pepper to taste
Preparation
Mince garlic Slice carrot thinly Dice red onion Remove stems from swiss chard and cut into large rectangles
In medium hot pan add 1 tsp olive oil. When pan and oil are hot, add garlic and saute until fragrant. Add carrots and cook for 2 minutes. Salt and pepper Add 1 tsp honey and stir carrots so that they are covered evenly. Cook for 3 minutes. Add lime Add red onion cook until slightly transparent about 2 -3 minutes. Add baby bella mushrooms cook for 2 minutes until slightly soft but still firm. Add swiss chard (make sure they are washed and dried). Cook for 1 minute until all greens have turned slightly dark, but have not completely wilted.
Place sauteed vegetables into a bowl. Add pepitas and salt and pepper to taste. Toss. Serve warm.
