Ingredients

1 (8-inch) flour tortilla

Vegetable cooking spray

1/2 pound ground turkey

1/2 cup water

2 Tablespoons chopped green onions

2 teaspoon chili powder

1/8 teaspoon ground cumin

1 1/2 cups shredded lettuce

3/4 cup seeded, chopped tomato

2 Tablespoons (1/2 ounce) low-fat Cheddar cheese

2 Tablespoons nonfat sour cream

1/2 cup salsa

Preparation

  1. Cut tortilla into 8 wedges; place on a baking sheet. Bake at 350 degrees for 7 to 8 minutes or until lightly browned.

  2. Coat a large skillet with cooking spray; place over medium-high heat until hot. Add ground turkey, and cook over medium heat until browned, stirring until meat crumbles. Drain and pat dry with paper towels. Wipe droppings from skillet with a paper towel.

  3. Return meat to skillet; add water and next 3 ingredients, stirring well to combine. Bring to a boil; reduce heat, and simmer 10 minutes.

  4. Large 4 tortilla wedges, 3/4 cup shredded lettuce, and one-half of meat mixture and chopped tomato on each of serving plates. Top each with 1 Tablespoon shredded cheese and 1 Tablespoon sour cream. Serve with salsa
