Ingredients

12 Oz. Cooked, diced chicken

1/2 Cup Fat Free Greek Yogurt

1/2 Lemon, juiced

1/8 tsp. Salt

1/8 tsp. Pepper

1/8 tsp. Sugar

1/4 Cup Cilantro

1 Cup Cucumber, diced

1/2 Tbsp. Fresh Garlic, minced

1/2 Cup Fuji Apple, diced (optional)

Preparation

Combine all ingredients and mix until coated. I recommend poached chicken for this recipe (as grilled chicken can dry out). Or, if you’re short on time, you can buy precooked chicken strips warm them and dice them up.
