Ingredients
2 lbs Uncooked large shrimp (peeled and deveined)
1/4 cup Fresh squuezed lime juice
2 Zest of 2 whole limes
1/4 cup Quality tequila
1/4 cup Extra Virgin Oilive Oi
4 cloves Fresh crushed garlic
1 -2 tsp Ground cumin
1/4 cup Fresh cilantro chopped finely
dash Fresh ground black pepper
pinch Kosher Salt
Preparation
Peel and rinse uncooked shrimp and add to a large mixing bowl or large Ziploc bag. Mix all marinade ingredients and reserve some fresh cilantro for garnish as well as some extra lime wedges. Marinate 1-4 hours refrigerated. Remove from marinade and thread onto metal skewers. Grill on low-medium heat turning frequently and brushing with leftover marinade. Cook 3-5 minutes per side until shrimp are pink and thoroughly cooked, but not blackened or burned. Serve with lime wedges and garnish with cilantro
