Ingredients
5 cups chicken (4 lg costco can’s of chicken)
1Tbsp salad oil
2Tbsp Orange juice
2Tbsp Vinegar
1Tsp Salt
3 cups cooke rice
1/2 cup small grapes
1/2 cup slice celery
13 Oz pineapple chunks (drained)
11 Oz Mandarin oranges (drained)
1/2 cup low fat Mayonnaise
1 cup toasted slivered almonds
Preparation
Combine chicken, oil, OJ, vinegar & salt. Let stand while preparing remaining ingredients or refrigerate overnight. gently toss together all ingredients.
