Ingredients
1/2 head ea. red/green cabbage, thinly sliced
3 carrots, grated
1 cucumber, diced small
1 lg. red pepper, diced small
1 bunch green onions (I used 2)
1 bunch cilantro, chopped
Dressing
1/2 c. white vinegar
1/2 c. vegetable oil
Few dashes of sesame oil
1/4 c. soy sauce
1 TBL garlic chile paste
2 serrano chilis
4 garlic cloves, minced
3 TBL sugar
1 cup peanuts, chopped
Preparation
Toss all salad ingredients together. Make dressing in jar and store in refrigerator for up to 1 week. When ready to serve, toss salad and dressing. Add peanuts last.
