Ingredients

1 cup creamy peanut butter

1 cup coconut milk

4 tablespoons Red Curry Paste

1 cup chicken or vegetable broth

1/3 cup maple syrup

4 tablespoons lime juice

1 1/2 tablespoons fish sauce

3/4 teaspoon salt

Preparation

Mix all ingredients in processor. Serve with fresh spring rolls stuffed with lettuce, julienned carrot and cucumber, sautéed tofu, mint, fresh basil and cilantro.
