Ingredients

2 T white vinegar

1 T brown sugar

1/4 t kosher salt

1/3 c sliced cucumber

1/2 c sliced pineapple

1/3 c halved cherry tomatoes

1/2 shallot, peeled and sliced thinly

2 T snipped cilantro leaves

Preparation

Heat vinegar, sugar and salt; stir until sugar and salt are dissolved. Set aside to cool in a shallow bowl.

When cool, add remaining ingredients and refrigerate for 1 to 8 hours before serving, stirring occasionally.
