Ingredients

6-8 egg whites

1 cup spinach

1 medium tomato

1 cup asparagus

2 tbsp cheddar cheese (low fat if preferred)

Preparation

Beat egg whites until mixed. Add salt and pepper to egg white mixture. You can also add additional spices like Cayenne pepper, onion powder or garlic powder to taste. Beat until egg whites and spices are well mixed.

Chop spinach, tomato and asparagus into small pieces.

In a medium saucepan, heat cooking spray, pour in egg substitute and swirl to coat the bottom of the pan. Fry to finish bottom and turn.

Place cheese and vegetables over 1/2 the omelet. Fold over, lower heat, and cook 1-2 minutes.
