1/2 onion, chopped

2 garlic cloves

2 carrots

Balsamic vinegar

Canned tomatoes 28oz

Tomato sauce

Canned chickpeas

Coconut milk

Bay leaf

3 tsp curry powder

1 tsp coriander

1tsp cumin

1/2 tsp red pepper flakes

Parmesan cheese

Preparation

Blend in batches to desired thickness. Slow cook 2-4 hours. Top with Parmesan cheese.
