Ingredients
4 large cooking apples
1.5 cups sugar
1 tsp cinnamon
1tbs rum
1/2 c veggie oil
1 tbs honey
3 eggs
1 c orange juice
1 tspp vanilla
3 c flour
2 tsp baking powder
Preparation
Cut apples into thin slices, put in a bowl with 2tbs sugar, cinnamon and rum. Mix well and set aside.
Cream oil, sugar and honey. Add eggs one at a time, beating with each one.
Mix together orange juice and vanilla. Alternately add the liquids and flour/bp.
Put 1/3 of mixutre in springform pan, spread 1/2 of the apples, andother 1/3 of the mixture and the other 1/2 apples, topping with 1/3 of the batter.
Bake at 350 degrees for 1.5 hours. Serve at room temp.
