Ingredients
16 oz. cheese tortellini
1 green bell pepper, sliced
1 red bell pepper, chopped
1 boneless chicken breast, cooked and cut into bite sized pieces
1/4 cup olive oil
2 tsps lemon zest
1/4 cup lemon juice
2 tbsp ground walnuts
1 tbsp honey
3 scallions, chopped
Asiago cheese
Preparation
- Cook pasta. Refrigerate until chilled.
- Prepare dressing in small bowl by whisking together olive oil, lemon zest, lemon juice, walnuts and honey.
- Combine pasta, peppers, scallions, chicken and dressing in large bowl. Top with cheese.
