Ingredients

16 oz. cheese tortellini

1 green bell pepper, sliced

1 red bell pepper, chopped

1 boneless chicken breast, cooked and cut into bite sized pieces

1/4 cup olive oil

2 tsps lemon zest

1/4 cup lemon juice

2 tbsp ground walnuts

1 tbsp honey

3 scallions, chopped

Asiago cheese

Preparation

  1. Cook pasta. Refrigerate until chilled.
  2. Prepare dressing in small bowl by whisking together olive oil, lemon zest, lemon juice, walnuts and honey.
  3. Combine pasta, peppers, scallions, chicken and dressing in large bowl. Top with cheese.
