Ingredients

Olive oil

1 garlic clove crushed

4 scallions

1 green pepper (finely diced)

1 red pepper (finely diced)

6 oz potato (diced and boiled)

5 eggs (large)

1 ½ cups cheddar cheese

1/3 cup sour cream

3 tbsp chives

Salt and pepper

Preparation

pre heat oven to 375 Line a baking dish with foil, oil and set aside Chop potatoes and boil until tender (drain and set aside) Sauté garlic, scallions, and bell peppers over medium heat until vegetables are tender, remove from heat and allow to cool (add potatoes to mixture) Beat eggs, sour cream, cheese, and chives together in a bowl Add vegetables and salt and pepper to taste Pour mixture into prelined dish and smooth top over Bake for for 30 to 40 minutes (until set in center)
