Ingredients
2 cups sugar
2 eggs
2 teaspoons vanilla
3/4 cup oil
3 cups peeled chopped apple
2 1/2 cups plain flour
1 teaspoon cinnamon
1 1/2 teaspoons bicarb
1/2 teaspoon salt
Topping
1 cup brown sugar
1 1/2 tablespoons cornflour
3/4 cup water
1 tablespoon butter
Preparation
Cake - mix sugar, eggs, vanilla, oil and apple. Add in flour, cinnamon, bicarb and salt. Spoon into 25cm square tin and name at 160°C for 50-60 minutes (top of cake is crusty). Carefully spoon topping over hot cake. Leave to cool.
Topping - mix brown sugar and cornflour in saucepan. Slowly add in water to mix, then add butter. Heat and stir till it boils and thickens.
